Cilantro Pork Tenderloin with Roasted Tomatoes

Cilantro Marinated Pork Tenderloin with Slow Roasted Tomatoes

If you love cilantro you will love this!  I know I say this every week but it really was one of the easier recipes that we've done.  With our busy schedules I put the pork and cilantro in a Ziploc bag in the morning, and threw it in the oven when I walked in the door.   Dinner was on the table 30 min later.

Cilantro Pork Tenderloin

  • 3 tablespoons olive oil
  • 3 tablespoons olive oil
  • 1⁄2 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 2 lb pork tenderloin, trimmed
  • 1⁄2 teaspoon kosher salt
  • 1⁄2 teaspoon pepper
  1. Combine oil, cilantro, garlic and pork in a ziploc bag.  Seal bag and refrigerate overnight. 
  2. Preheat oven to 425 degrees. 
  3. Sprinkle pork with salt and pepper on a baking sheet. 
  4. Bake 20 to 22 minutes or until thermometer reads 145 degrees.
  5. Cover with foil and let stand 5 minutes before slicing.

Slow Roasted Tomatoes

  • 2 tablespoons olive oil

What Do You Think About The Flu Shot

The yearly push for everyone to get the flu vaccine is on! I've had so many people tell me about receiving emails from their medical doctors announcing the availability of the flu vaccine. All the signage at grocery stores and Walgreen's remind us that it's here - as though the flu shot will be the one thing that keeps you healthy this winter.

I can't tell you to or not to take any form of prescription medication, including the flu vaccine, I would suggest you consult with your physician that prescribes them (that's my friendly disclaimer).

Let's dive into why the flu vaccine has become the "mandatory" trip to your local drug distribution establishment every year. The flu in the past could be a severe illness, in fact, the 1918-1919 flu may have caused more deaths than the plague did during the entire middle ages.

Your Most Valuable Possession

It is a sad statement of modern society when many of man's "most valuable" possessions are his house or car, which can be taken away in an instant! 

If a man has his health he can rebuild his house or buy a new car.  It's also sad that we usually provide the normal regular maintenance to our cars, (that we will usually sell or junk within 5 years), but we fail to maintain the bodies we will keep for 70, 80 or even 100 years!

Hippocrates was a Greek physician and philosopher and has the honor of being called the Father of Medicine.  Honestly, it is with good reason that the medical profession must take a Hippocratic oath, I just wish they read it once in a while! 

Hippocrates was an amazing man, surviving 20 years of being jailed!  He was the first person to say that diseases were of environmental factors such as diet and how the person lived, not curses from the gods.

Friday Feast - Cilantro Turkey and Zucchini Salad

Cilantro Turkey Saute and Zucchini Ribbon Salad

This was one of the fastest meals I have ever cooked.  It was really flavorful and only took about 15 min total to make, this makes a great quick weeknight meal.  You can even combine it with roasted tomatoes and I think it would add to the flavors.

Cilantro Turkey Saute

  • 2 tablespoons olive oil
  • 1 cup chopped white onion
  • 1 red bell pepper, chopped
  • 2 lb lean ground turkey
  • 1⁄2 teaspoon kosher salt
  • 1⁄2 teaspoon pepper
  • 1 cup chopped fresh cilantro
  • 2 teaspoons of ground cumin
  1. Heat oil in a large skillet.
  2. Add onion and bell pepper to pan; cook 6 minutes or until browned.
  3. Add turkey to pan; sprinkle with salt, pepper and cumin.
  4. Cook 6 minutes or until browned.
  5. Stir in cilantro.

Squash Ribbons

  • 3 large yellow squash
  • 2 tablespoons olive oil
  • 1⁄2 teaspoon kosher salt
  1. Using a vegetable peeler, shave squash lengthwise into thin ribbons.
  2. Combine squash, oil, and salt in a large bowl.

So, I can't say that I am a fan of Kevin Trudeau, but I can say that I'm a fan of the concept behind this. 

When I see new patients and we cover the reasons that brought them into my office there's inevitable shock when, after using Applied Kinesiology, we discover the root of their functional problem.

If you're like me, you’ve probably spent the past two weekends glued to your TV and computer watching football and tracking your fantasy football teams. (And, if you're like me, you've watched your fantasy teams get shellacked two weeks in a row!)

You've probably heard or read about the focus at all levels of football to diminish the occurrence of concussions. The question is: Why do concussions matter so much? The actual medical name for a concussion is Mild Traumatic Brain Injury. This brain injury term is a much scarier and much more accurate way of describing what a concussion is.

The brain is three pound of fat and protein, it's encased in the rigid bony skull, and the dura attaches it to the skull. The brain is also cushioned and surrounded in the skull by cerebral spinal fluid that acts a lot like a liquid airbag around your brain. Dr JJ's Quote of the Day - You are a Soul

C. S. Lewis is one of the great Christian literary figures of the last century.  He is probably most famous for The Chronicles of Narnia, however, he wrote several excellent books on his views of Christianity.  An early mentor of his was J. R. R. Tolkien, the writer of The Lord of the Rings, and they had many great debates on Christianity. I love this quote for many, many different reasons!  

Lets start with the definition of soul. Webster's defines soul as "the spiritual or immaterial part of a human being or animal, regarded as immortal."  I like this, but I think you can add in the animating divine spark that is in us all. 

It's this divine spark that is what we are down at our core.  We are luminous beings, not crude matter (Yoda).  Another reason I enjoy this quote is that it makes a reader consider what's inside.  While regarding what's on the inside, I hope a reader will understand that while you ...

Share The Health - Measles Outbreak

While I was enjoying my coffee and surfing the net this morning I came across a blog that really impressed me.  With news agencies reporting the US Centers for Disease Control's prediction that this year's measles outbreak will be one of the worst in more than a decade, measles is certainly getting it's 15 minutes of fame.  And, in a way, so am I, along with numerous other informed parents, choosing not to vaccinate their children.

Friday Feast - Paleo Meal Lemon Cod with Crispy Curry Carrot Strips

A quick and easy paleo meal, Lemon Cod with Crispy Curry Carrot Strips.  A simple, straightforward meal that is really delicious!  Use any herbs that go great with fish like parsley, thyme, or basil.  This one makes a great paleo weeknight meal.

  • (4) 6 oz. cod
  • 1 Tbs butter
  • 1/2 cup fresh chives, snipped
  • 2 lemons, sliced
  • 2 cloves garlic, pressed
  • 4 medium to large carrots, peeled
  • 4 tsp. olive oil
  • 3 to 4 tsp. curry powder
  • 3 Tbs. butter slightly softened
  • Salt and pepper to taste

Preheat oven to 400 degrees. 

  1. Cut 4 large squares of heavy duty aluminum foil. 
  2. Rub each square with butter and sprinkle with salt and pepper. 
  3. Place one fillet in each piece of foil. 
  4. Lay lemon slices down the length of each, top each with garlic and chives. 
  5. Seal each fillet tightly in foil.  Bake 15 to 20 minutes, until fish is opaque and flakes easily with a fork.
  6. Grease a large baking dish with butter.
